I do believe a gas cook top is the ideal. I only select power because my gas line volume during my condo was designed for heating and nothing different. A gas top cooktop and heavy cast iron cook wear is a favorite of mine. a power stove that has several flexibility can approximate gas as being a second choice, but it really is still nothing compared to cast iron and fireplace. I do use our cast iron with my flat top at times and with some changes in pan handling I obtain the result I want. Clarisa Wasem
