When choosing cooking appliances for your gourmet kitchen, one of the first decisions you have to make is choosing between gas heat and electric heat. Gas cooking appliances provide instant heat, easier controls, and lower costs over time, while electric cooking appliances provide even cooking heat and lower initial costs of the appliance.

You could also get a combination microwave/convection oven. Electric convection ovens use heated air to cook food faster than conventional ovens that use radiant heat.
When choosing electric stoves for your gourmet kitchen, smooth-top surfaces are the way to go instead of the lower-cost electric coil burners. Smooth-top surfaces could use any of the three heat source types: magnetic-induction elements, radiating electric coils beneath the glass surface, or halogen burners. All smooth-surface electric burners require thick, flat-bottomed cookware.
When choosing gas stoves, commercial-style glass stoves offer the designer look suitable for a gourmet kitchen environment. Sealed burners are a breeze to clean, and a pilotless ignition system means no hot spot when burners are off. Commercial-style glass stoves offer high cooking heat and require heavy-duty ventilation systems.
Most gourmet kitchens feature commercial-style stoves with six or eight burners instead of four, basting and grilling functions, and built-in warming ovens. For home use, commercial-style cooking appliances are preferable to real commercial stoves. Use of commercial stoves often comes with specific requirements that include special ventilation systems and non-combustible walls and floors. Most state-of-the-art cooking appliances also feature digital temperature panels and touch-pad controls instead of knob or dial controls.
Consider modular kitchen design when planning your gourmet kitchen. Modular cooktops allow you to add burners, downdrafts, griddles, deep-fry and steamer units, woks, rotisseries, and grills. Wall ovens separate from cooktops provide several cooking work stations instead of just one. Gourmet cooks will love the convenience of having a double wall oven that not only saves space, but also provides double baking/roasting capacity.
