In choosing a bread machine for your gourmet kitchen, there are several considerations you have to keep in mind:

• How many people will you be serving? Keep in mind that a 1-pound loaf makes around eight slices while a 2.5-pound loaf yields about 20 slices. There are programmable bread machines where you could choose to bake 1, 1.5, and 2-pound loaves.
• What type of settings do you want to use? You could have a choice of more costly programmable bread machines where you could customize settings, or you could do with a bread machine costing less than $100 but with pre-programmed settings.
• Do you want horizontal baking or vertical baking? You could have a choice of horizontal loaves or vertical loaves. Artisan breads are baked horizontally while vertical loaves could come out looking like loaves of sliced bread at the supermarket (if sliced properly).
• Do you want a bread machine with a delayed timer? If you wish to wake up with the smell of freshly-baked bread wafting through the house, you could choose a bread machine with a delay timer. Most bread machines come with a 13-hour delay timer.
• How long to you want to bake your bread? A smaller machine would be better if you wish to bake bread in less than an hour. Larger machines tend to yield denser loaves when using quick-bake cycles, while smaller bread machines can turn out softer bread when baking under an hour.
• Is there a need to burn off manufacturing oils in your machine? Try to find out if the bread machine requires that you run the machine once or twice to burn off excess oils left in the machine from the manufacturer.
